The Texas Hill Country is a vibrant destination for wine and dining that’s attracted tourists for decades, but it’s come into its own recently as new investment is made in the region.
Chef Ryan Hildebrand surprised Houston food-scene followers when he announced in November 2019 he was leaving FM Kitchen & Bar, the restaurant he co-founded. His next chapter brings him farther west, to Wimberley.
Hildee’s Dine-Inn is slated to open in early December in a space adjacent to Blue Hole Regional Park. The kitchen will source from local ranches and farms to feature seasonal Hill Country fare. Hildebrand’s experience in fine-dining Houston restaurants such as the now-closed Rockwood Room, Textile and Triniti will inform the menu, but Hildee’s will be more casual.
